At Dallmann Confections, every chocolate tells a story—a story that begins in a small village outside Salzburg, Austria, and continues in sunny San Diego.

Our founder, Isabella Knack, grew up surrounded by the sweet aromas of her family’s pastry shop. Her grandfather, Guenther Dallmann, opened the original shop in 1954 in St. Gilgen, where he passed down his love for fine pastries and chocolate-making. Today, Isabella carries that legacy forward, blending Old World techniques with a fresh, modern twist.
